Strawberry Rhubarb Pie

Ingredients:
Filling:
- 3 stocks rhubarb
- 1 pound strawberries
- 1 ounce cornstarch
- 6 ounces granulated sugar
- Pinch of Salt
Pie Dough:
- 2 1/2 cups pastry flour
- 1 1/4 teaspoon salt
- 6 Tablespoon chilled unsalted butter (cubed)
- 3/4 cup chilled vegetable shortening (cubed)
- 1/2 cup ice water
- 1 whole egg
- 2 tablespoons granulated sugar
Making the Pie Crust & Getting Fresh Ingredients
Directions:
- Cut butter and shortening into the flour and salt with either a kitchen aid attached either the dough hook, food processor, or by hand with a dough cutter. Once the butter is about the size of peas, you’re good.
- Stir in ice water little by little.
- Once the pie dough is together cut it in half, wrap in plastic and refrigerate for an hour.
- When dough is chilled roll out to 1/8 inch thick.
- Fit carefully into pie pan, add filling (below) and top with other half of dough.
- Egg wash top, prick with fork and sprinkle with granulated sugar.
- Bake pie at 350 on a pan for 45 minutes, cool on a wire rack for 30 minutes.
For the Filling:
- Cut rhubarb into 1/2 inch pieces.
- Mix everything together in a bowl and add to pie shell.
